Campfire Cooking: Pumpkin Spice Grilled Cheese

This fall, we hosted creator, Wilson Nguyen, at Getaway Big Bear outside of LA, so he could disconnect from the noise and focus on finding a fresh pumpkin spice recipe. During his stay, he created an amazing Pumpkin Spice Grilled Cheese—save this recipe in your back pocket for your next escape to nature.


  • Multigrain Sandwich Bread (2 slices)
  • Muenster Cheese (2-4 slices)
  • Butter (1 tbsp)
  • Pumpkin Puree (¼ can)
  • Maple Syrup (1 tbsp)
  • Pumpkin Spice
  • Salt
  • Sugar


  1. Spread butter on one side of each bread. Sprinkle sugar and pumpkin spice onto the buttered side. 
  2.  In a separate bowl, combine pumpkin puree, maple syrup and a pinch of salt. 
  3. Assemble the grilled cheese with bread, cheese, pumpkin puree mixture, cheese, then bread. Be sure to have the butter sides face outward.
  4. Butter a skillet and cook the grilled cheese on each side till nice and golden brown.
