Campfire Cooking: Campfire Mac and Cheese

Earlier this year we hosted Garianne Gagliardi of Garianne’s Table at Getaway Western Catskills outside of New York, for her to take some time to reconnect to nature and experiment with some new campfire recipes. Here is her recipe for Campfire Mac and Cheese.

Ingredients:

  • 7 oz elbow macaroni
  • 1 cup grated sharp cheddar
  • 1/2 cup shredded parmesan
  • 1/2 cup shredded mozzarella
  • 1/4 cup gouda (optional)
  • 1/2 cup half & half
  • salt and pepper to taste
  • Butter

Instructions:

Cook macaroni according to back of package. Let cool.

Once cooked and cooled, mix together with half & half, all cheeses and salt and pepper. Transfer to oiled disposable aluminum tin.

Place butter cubes on top of mixture and seal with aluminum foil. Cook immediately or store in fridge for the next day. When ready to cook, remove from fridge and place over elevated fire for about 20 minutes.

I recommend stirring halfway through! Enjoy!
