Campfire Cooking: Stovetop Nachos

Earlier this year we hosted, Bunny of @PortlandVegans at Getaway Mount Adams where she spent some free time creating new recipes in nature. Here’s her recipe for Stovetop Nachos—perfect for the dry months where burn bans might be in place.

Stovetop Nachos

Ingredients

  • 2 bags of chips (I used bean chips)
  • 1 block of ground beef 
  • A packet of taco seasoning
  • 1 jar of nacho cheese 
  • 1 can of black beans
  • Salsa of your choosing
  • 1 avocado
  • 1 bunch of scallions
  • 2 tablespoons of sour cream
  • 1 lime

Instructions: 

  • Prepare beef to your liking
  • Mix in preferred amount of taco seasoning
  • Add beans to beef 
  • Warm up the nacho cheese separately
  • Grab cast iron pan (10” or 12”)
  • Layer chips on the bottom of the cast iron pan
  • Turn stove to medium heat (I had to turn on both burners)
  • Add beef, black beans, and nacho cheese over the bottom chip layer – cover with tin foil for 5 minutes 
  • Remove from stove
  • Top with avocado, sour cream, scallions, and lime wedges
  • Enjoy!
