Campfire Cooking: Blueberry Oatmeal

Earlier this year we hosted Garianne Gagliardi of Garianne’s Table at Getaway Western Catskills outside of New York, for her to take some time to reconnect to nature and experiment with some new campfire recipes. Here is her recipe for Blueberry Oatmeal.

Ingredients:

  • 2 cups nut milk
  • 1 cup gluten free rolled oats
  • 1 tsp cinnamon
  • 1 tbsp ground flaxseed
  • 1 tbsp chia seeds
  • 2 tbsp pure maple syrup
  • 3/4 cup frozen or fresh blueberries
  • blackberries for topping

Instructions:

Add the nut milk to a small saucepan on the stove, on high heat. Add in the rolled oats and bring to a boil. Once the oatmeal has reached a boil, stir well, and turn stovetop down to medium heat. While continuously stirring the oats over medium heat, add in the cinnamon, flax seed, and chia seeds, and frozen blueberries.

Once the oatmeal mixture begins to thicken up a bit, add in the maple syrup. Turn heat down to low and continue to stir frequently until you reach your desired thickness. Serve immediately or store in the fridge for later. Feel free to enjoy this blueberry on its own or add desired toppings.
