Campfire Cooking: S’mores with Caramel-Filled Chocolate and Homemade Graham Crackers

To celebrate National S’mores Day we hosted Kathleen Stewart at Getaway Gilchrist Springs outside of Orlando so she could disconnect from the noise and reconnect to her love of cooking in nature. During her stay she crafted this delicious —read on for her recipe and to hear more about her Getaway.

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2-1/4 cups flour
  • 1-1/4 tsp cinnamon
  • 1-1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp ground flax, optional
  • 2 tsp vanilla extract
  • 1/4 cup milk
  • 1/3 cup honey

Instructions:

  1. Preheat the oven to 350° F (180° C).
  2. Mix butter and sugar, until light and creamy.
  3. In a separate bowl mix flour, cinnamon, baking soda, salt and flax.
  4. Add flour mixture to the creamed butter and sugar. Mix will be fine and grainy.
  5. Add vanilla, milk and honey. This will bring the dough together.
  6. Place dough in plastic wrap and refrigerate for a minimum of 1 hour.
  7. Divide dough in half and roll out into a large thin rectangle, should be just shy of a half sheet pan.
  8. Bake for 10-15 minutes.
  9. Poke with a fork while still warm and cut while still warm.
  10. Cut into squares or rectangles, or whatever shape you like.

We walked the Devil’s Millhopper and enjoyed views of the shaded oak areas and the agricultural views.

We recharged by spending time together in nature and enjoying the simplicity of campfire cooking.
