Campfire Cooking: Brownie S’mores

Earlier this Summer, in honor of National S’mores Day, we hosted creator, Brittney Brickles, at Getaway Hill Country outside of Austin, so she could disconnect from the noise and focus on finding a fresh twist on the traditional s’more. During her stay, she created these amazing Brownie S’mores—save this recipe in your back pocket for your next escape to nature.

Ingredients:

Start by making the Brownies:

1 1/2 cups  Almond Flour

1 tsp. baking powder 

1/2 tsp. salt

5 tbsp. butter

1 cup sugar

3/4 cup brown sugar

3/4 cup cocoa powder

3 eggs

1 tsp. vanilla

Optional: 1/2 cup chocolate chips mixed in or sprinkled on top 

Instructions:

Combine ingredients, wet + dry, then pour into 8×8 pan. Bake at 350 for 35-40 minutes or until a took pick come out clean.

Cut the brownies into graham cracker sized squares once cooled. 

Roast marshmallows over an open fire at your cozy Getaway cabin. Place beautifully toasted marshmallow on top of brownie square, then crush 1 graham cracker over the whole thing. 

Take a big bite & enjoy a fudgy, delicious take on everyone’s favorite outdoor treat. 

What makes the perfect s’more?

It’s the marshmallow for me—it has to be toasted just right. My kids and their friends love roasting the marshmallows until they’re on fire—that’s too much. That perfect light brown all around is just right for warm & gooey s’mores marshmallow. 

What do you want s’more of in your daily life? 

More family time. As a military family heading into a deployment season, we cherish all the time we get together. Our weekend at our Getaway cabin was the perfect escape from everyday life and gave us all a beautiful opportunity to just focus on each other. We will take those special memories with us into this time apart from my husband and we look forward to coming back next year when he’s back home with us so we can have another perfect weekend away from cell service, TV, work and all the other things to just reset and focus on our family of four being back together. Family is everything to us.
