Campfire Cooking: Glamping Chili

Denisse Carrillo was a recent guest to Getaway Brazos Valley outside of Houston. She took the free time in nature to reconnect to her love of cooking by creating this recipe for Glamping Chili. She graciously shared the recipe with us so we can all give it a try on our next Getaways.

Ready in 40 minutes + Serves 3-4  people

Ingredients:

  • 1 pound ground lean turkey (or your preference of protein
  • 1 8 oz can tomato sauce 
  • 1-2 15oz  cans of kidney beans (light or red)
  • 1.5 tablespoons of chili powder
  • .5 tablespoon of seasoning salt 
  • ½ diced onion
  • 8 oz water (use the tomato can for measurement)
  • Olive oil(provided by getaway)

Instructions:

First let your your olive oil heat up for a a minute. Then add diced onions. Sauté for 2-3 mins. Add ground turkey, cook for 3-4 mins until no longer pink. 

(You can use whatever protein you’d like lean ground beef or TVP. You might need more salt if you use something other than already salty turkey!)

Add chili powder and seasoning salt. Sauté for 1-2 mins. Add tomato sauce, beans, and water. You can decide how much beans you want, but I love beans so we put 2 cans.  Let it simmer uncovered for 10 minutes to thicken up, then covered for 20-30 minutes stirring occasionally. The longer it simmers the better! (I added a little bit of sugar, like half a packet.)

Serve over Fritos and whatever other toppings you’d like… cheese, sour cream, chives, etc. and enjoy!
